Chop and mix the following in a big ol’ bowl:
- heirloom tomatoes
- fresh mozzarella
- French or sourdough bread
- red and yellow bell peppers
- cucumbers
- black olives
- basil
- chives
- shallots
Drizzle with balsamic and olive oil vinaigrette; serve immediately.
P.S. This tastes really yummy with red wine or sweet tea.

So my mom has this Italian friend who made tomato salad when I was younger. When I was a teenager she taught me to make it. It’s diced fresh tomatoes (dice them over the bowl if possible to retain as much juice etc.), diced green peppers, diced onion, a tablespoon or two of olive oil and salt – to your tastes. You let it sit for at least 15-20 minutes. The salt draws a lot of the liquids out, and it’s fabulous you sop up the juices with some good bread. I eat it all summer long.

I am most definitely saving this and bringing it to the grocery store with me! I absolutely love anything caprese-like.
The only thing that would make that salad yummier is the warm pumpernickel croutons from Ruby Tuesday’s instead of the French/sourdough. Oh yeah, make mine red wine.
