Ok, so I had a ripe avocado that I “needed” to eat before leaving for Redding today, so I whipped up this improv sandwich yesterday for lunch.
I cut it in half, then put one half in the fridge to have with dinner (I just cut away the couple brown spots). The other half, I sliced up and placed on a piece of wheat bread.
Then I added bits of brie cheese, cherry tomatoes cut in halves, and sliced basil, stuck another piece of bread on top, and toasted it in my panini press (LOVE THAT THING).
Oh, so yummy… Quick and easy, too. A simple veggie meal. Highly recommended for Meatless Mondays, Wednesdays or Fundays. 🙂
These are a few of my favorite things! 🙂 I’ve been eating garden tomato sandwiches for lunch for the last week and a half. I love this time of year!
Apart from the avocado (brrrr) this looks delicious! I’d probably some grilled mushrooms or sundried tomatoes too.
Yum Yum! Just had a Caprese sandwich last night at my favorite restaurant and it looked quite similar!
Doesn’t Brie on anything make you want to die of happiness?
Totally. I have to portion it out otherwise I could easily eat a wedge in one sitting with a loaf of bread.
That delights karen! beautiful food!
Loved love avocado, cherry tomatoes, basil, so that the cheese does not know
Ne should be a delight!
