The official name of this dish is Shrimp Zoodles Parmesan for Two, but the unofficial name is HOLY FREAKING SH*T, MA!!

I made this dish last night and it was SO bomb. It’s baked shrimp parmesan with zucchini “noodles” and a tomato sauce.

Shock. Ing.

That’s how good it was. Not ’cause I had any doubts about the recipe or anything — I got it from skinnytaste.com, which never steers me wrong — but because I didn’t mess it up, haha!

Most of the time when I cook something for the first time, it ends up a little off. I mean, it’s usually edible but…I’m not naturally gifted in the kitchen, so it takes me a few tries.

But this one was really, REALLY good right off the bat.

Granted, I did end up tweaking it a bit. I was really hungry and didn’t have the time/patience to make the tomato sauce from the recipe, so I just opened up a bottle of tomato basil spaghetti sauce I had in the cupboard and used that. I also doubled the amount of shrimp the recipe calls for because El Hub is a growing boy who needs meat. LOL! Feeding dudes… It’s a challenge sometimes.

    Oooooh this looks really nice! Haven’t seen a recipe like this before. The only thing that would worry me is whether the shrimp would be a bit dry after being baked.

    And after reading how easy the recipe is I want to try variations that include flavours from some of my favourite shrimp dishes when I go out for dinner: coconut coated fried shrimp with maracuja sauce and tempura prawns with mango-chily chutney!

    Oh my, it was not a good idea to read about food before breakfast!

    That looks so good Karen! Honestly everything you make is stuff that I like and I’m a vegetarian mostly too but I eat fish. I also don’t care for white/Alfredo pasta sauce much and people always think I’m weird if I put red sauce with shrimp, but it’s so yummy!

    I would eat this any time, but stick with real pasta. Never got the whole Zoodles trend.

      This is actually pretty healthy. The website that the recipe comes from is all about light eating.

    Oh m’gosh! This looks so yummy! Your food posts make me so hungry. Wish I could blame my difficulties of not losing weight on you, but alas, they are my own doing. This looks yummy. Too bad the DH doesn’t like shrimp or any other seafood for that matter. I hardly ever eat shrimp, which I love. And who makes tomato sauce from scratch anyway? Ok, I do it every now and then, but I usually don’t have time (or good quality, in season tomatoes) for that.

    I definitely want to try this recipe! I haven’t made/ had “zoodles” before, but it really appeals to me because sometimes pasta is just too heavy! It looks delicious!

    Oh gosh, that looks good! I don’t think I’d be able to make the shrimp though– they’d end up dried out or overcooked.
