My favorite way of eating fresh tomatoes is to slice them thin, add a little sea salt and pepper and place between two toasted whole wheat slices of bread with a nice schmear of mayo. A nice fresh tomato sandwich.
If you’re feeling a bit saucy, add some fresh, whole basil leaves.
Although I agree with everyone on the caprese salad idea, my Dad’s twist involved arugula and cold pasta (toss the pasta alone with some lemon and olive oil.) Divine!
Make fresh guacamole :). Diced tomatoes, red onion, avocado, cilantro and maybe some jalapeno mixed with fresh lime juice and a dash of salt. Use pita or tortilla chips to dip :D. Hungry now!
Bread salad–big chunks of crusty bread tossed with about a half cup mixed herbs (basil, parsley, maybe chives), olive oil, lemon or lime, balsamic vinegar, sea salt, coarse black pepper, chunks of room temperature tomato. Let sit until it all soaks together.
I love tomatoes, especially from the farmers’ markets – fresher and usually FROM the farmers! Simple is best – sliced with a little olive oil, balsamic vinegar if you want, sea salt and freshly ground black pepper.
