Start by cooking two cups of pasta until al dente. Throw into a strainer and run cold water to cool.
Next, chop…
Cherry tomatoes
Spinach
Basil
Fresh mozzarella
Salami (optional)
Whisk together…
3 tablespoons olive oil
1 tablespoon rice vinegar
1/2 teaspoon sea salt
1/4 teaspoon pepper
Throw it all into a bowl with the pasta; mix thoroughly.
Serve with hummus and chips for a quick, yummy lunch.
