A lot of people don’t know this, but it’s a proven fact (not really). Rainbows taste like pad thai.

I got a bag of crazy yellow and purple carrots (the carrots are buried down there in the bowl somewhere) at Trader Joe’s and thought they’d be perfect for this Rad Rainbow Pad Thai recipe I found on — yup, you guessed it — ohsheglows.com.
I’ve made this a few times now. Sometimes I’ll have it as is, and sometimes I’ll add a protein on top, like I did a lightly fried tofu a while back, and that was really good. Another time I cooked some frozen shrimp in TJ’s Sweet Chili Sauce — also delicious, and cooking the shrimp only took about five minutes. El Hub’s favorite was the time I added Trader Joe’s Ginger and Soy Cod Fillets, which I baked in the oven. The ginger-soy flavors go really well with the pad thai veggies.
You gotta give this one a try. It’s SO nom.
It looks like pasta in there, but it’s all veggies.

Pad Thai is one of my favorite things to eat when we eat out, but I never thought of making it my own.
It looks so delicious, and eating colorful is way more fun.

How funny that you mention TJ sweet chili sauce…I have been addicted to the stuff lately. TJ has these little shrimp bites that are perfect with that sauce.

That sauce is SO good. I could seriously put it on anything. Do you ever eat fried tofu? I like to fry mine with a little bit of olive oil spray in a pan and then dip it into the sauce.

I don’t normally fry anything….. but I LOVE tofu. I put sauce on it and bake it sometimes. You could cube it and do that too.
But oh, i might have to fry some now just to dip it in that sauce!

These days I am making plenty od kebabs with minced meat. I would mix the ingredients I use and just make sausage -like shapes and pop thwm in a microwave. Everything’s done in twenty five minutes maximum.

Hi Elena,
You can find them in the TJ’s frozen section. At my store they’re usually next to the shrimp!
One thing that I like to do with the cod is bread it first with panko crumbs. I set it on top of a baking sheet, spray the topping generously with olive oil spray, and then bake it! It comes out nice and crunchy and gives the fish some extra texture.
