The first time I went there, I had chicken nachos with this melted white cheese; it was so good I wanted to lick the plate. I just had to ask what kind of cheese they used. That was my first encounter with goat cheese. LOVE it!! I have never found it in the local stores, but whenever I get a craving for it, I go to the Mexican resturant! Ate it up like it was icecream! I love when goat cheese is in salads.. everfy once in awhile you get a bite of the creamy goodness! I had a salad once with spinach, goat cheese, sugared walnuts, granny smith apple slices, and raspberry vinaigrette. It was the best salad ever!
