Last night I prepped a huge batch of this salad with cabbage, carrot, bell pepper and celery to eat for lunch this week. I also made a tahini lemon garlic dressing, too, which I like to toss in at the last moment.

To mix up the flavors a little each day so it doesn’t seem like I’m eating the same salad over and over again, I throw some herbs into my bowl at lunchtime. Today I used cilantro. Tomorrow, basil. 🙂
I had mine today with a side of quinoa with a pat of butter, a sprinkle of garlic powder and a pinch of salt. Everything was so. Good. Together.

We do something similar. We cook up a big batch of rice/couscous,etc for the week on Sunday. Then we grab a bunch of veggies at tj’s or the farmers market and chop them all up. We mix them together in a big bowl and take handfuls out and toss in the wok with a ltitle oil and whatever protein we want for the night. A drizzle of sesame oil and some tamari or soy sauce and you’ve got dinner baby! It’s fresh, and easy for after a day of work.

OMG that looks sooo good! I have had ZERO urge to cook now for weeks (might even be months – I really try not to dwell on it) which I hate because I normally love to cook. I have been flipping trough cookbooks and looking at sites but NOTHING really looks good or interesting. I have been living on pasta with tomato and mozzarella and store bought mushroom soup unless someone else placed food in front of me.
I am getting some cabbage tomorrow and trying this out! (tonight I am going to the theater so I no cooking tonight)

This looks yummy! I’ll have to check out the recipe. I try to pack my lunch to take to work, but don’t always succeed. This looks like a nice alternative from the usual lettuce salad!

I do Meatless Most Days. *grin* my favorite (for warm months anyway) is probably soba noodles (or spaghetti squash!) with homemade ginger-sesame-soy dressing. You can add all sorts of things (green onions, broccoli, and carrot are my standby), and it can be warm or cold and is still delicious. It’s also one of those things where you can make a big batch on Sunday, and toss it with other things for a few days to make different meals.

Karen, that salad looks so delicious! I love cabbage but I forget about using it in salads. I will have to check out that website, and get the recipe for the lemon tahini garlic dressing. Yummo. If I didn’t have this awful cold, I would run out to the store right now

We used to do meatless days when I was young living at home. My mom would fix fried corn (delicious) ,sliced tomatoes and crusty bread and butter. So good! I made steamed cabbage last week and that was good. Thanks for reminding me! I’m going to try to do a meatless meal occasionally .It’s healthy and good for the environment .

You’re so good prepping all your lunches for the week! I haven’t done that in several weeks. So disorganized and time consuming to not know what I’m eating for lunch.
I try to stay away from OhSheGlows. It’s a very smart site but I’m afraid all the healthy dishes might make me break out in hives.

I try to make one non-meat dinner per week. I made cauliflower Caico e pepe tonight. It’s tough because hubby does like a little meat.
