Here’s my new favorite way to spice up a run-of-the-mill frozen burrito (’cause lately I’ve been too lazy to cook).
Heat a frozen burrito in the microwave until it’s about halfway done.
Layer sliced olives on top.
Pour on some pre-made enchilada sauce.
Sprinkle a handful of shredded cheese.
Nuke that sucker until the cheese is melted and burrito is cooked all the way through.
Voila — a lazy girl’s lunch in less than five minutes!

I love Trader Joes frozen food, and you made it look even better.. yum!!
Karen says
Hi, Jen. Isn’t it delish? What’s your favorite frozen TJ dish? It’s amazing how so many of their frozen products are low in preservatives or don’t contain any at all. I mean how do they do it if stores like Safeway can’t?
LOVE TJ’s!
Ronda says
You are preachin’ to the choir, sister! 🙂
That is one of my favorite tricks. My fave is a frozen chimichanga, served on a bed of lettuce & diced tomato, with a dollup of sour cream…yum! It is so pretty you may not care it was frozen, I sure don’t mind.
Karen says
How fancy! It’s 11:15 at night and I’m ready for bed, but that just made my mouth water, LOL!
Rae says
Oh my god that looks SO tasty D: I just finished eating green mint chocolate chip ice cream (yum!) but you’re totally making my mouth water again, Karen!
*attempts to avert eyes from tasty food on the screen*
Karen says
Hi, Rae! Mint choco chip is El Hub’s favorite ice cream, ha! It’s all he ever gets. I keep trying to talk him into trying something new.
How are you doing? At this very moment we’re less than 25 hours away from 2011!
marisol says
Yum! I just heated up a bean & cheese burrito from TJ’s. I like to put some pepper jack cheese on top of it and spicy salsa. Never added olives before. May have to try that.
Karen says
Oh, girl, you gotta try the olives. They totally take it to the next level, LOL! I’m not kidding.
Hope you’re 2010 is ending on a good note. I hope you have a great 2011, Marisol. 🙂
makeup morsels says
yummm love all things trader joes! Have you tried their mango ice bars before? they’re so good…for some reason, cold weather makes me crave cold food
Karen says
Yum! I don’t think I’ve tried those before, but I do love mango so I’m making a mental note to look for them next time.
[KAREN, REMEMBER THE MANGO ICE BARS AT TJ]
Kris Cameron says
Did you know that some people don’t have Trader Joe’s?! Can you imagine that kind of suffering??
Karen says
Ha! I can imagine it because I hear about it from my in-laws in Hawaii all the time. They don’t have a TJ yet and ask us to ship stuff out to them. Whole Foods just doesn’t compare…although I do love their salad bar.
Tracy says
I wish we had Trader Joe’s in Canada!!!
Karen says
I wish you did too, Tracy. No one on earth should be made to live without the awesomness that is the Trader Joe.
If it’s any consolation, sometimes the lines are so long inside the stores here that a trip to TJs can turn into an all day affair. And Tabs absolutely hates their cat food.
In other news, I hope you have a happy new year. I’m pretty sure 2011 is going to rock for us all.
HanaBerlin says
That looks delicious!
Karen says
Ya know, it doesn’t look half bad, does it? A frozen burrito does not a Pioneer Woman make, but I’ll still take it in a heartbeat.
Have a great night. 🙂
Martha says
I need to go to TJs again soon. That looks delicious!
Nina says
iwannnnntttt!!!
