I’ve been obsessed with this yummy, easy snack. I used a chia pudding recipe I found on skinnytaste.com and tweaked it with some ingredients from my kitchen.
Haha I think it’s so funny that we are always in sync when it comes to food! 😛 Anyway, I just recently got into eating/using chia seeds too! I love just putting it in my coconut water. Haven’t heard of making a pudding but that’s BRILLIANT! I am definitely running out for some berries tomorrow! I don’t have almond milk at the moment but I do have hemp (mmm…:D) so I will try it with that instead! Yaaaay so excited! 😀
I’m sure hemp milk will work too. You may also want to add some honey before popping it in the fridge if you want it to be sweeter. Good luck and let me know how it turns out!
Thanks for the recipe! I’ve just recently got into chia seeds and have been looking up more ways to incorporate them into my everyday diet. Another great way to use them is in banana pancake batter if you don’t mind the texture.
Surprisingly no,they are still very smooth. They just have that added seed texture like seeds in a grain bread, just have to figure out good seed to batter ratio!
This looks so good! Thank you so much for posting this.
I have been looking for ways to incorporate chia seeds into my diet on a more consistent basis. And since this looks like dessert, and i love dessert, i’ll be trying this one 🙂
Right now, I’m mainly putting chia seeds in my green juices and smoothies.
I had chia seed pudding for breakfast this morning. I used Trader Joe’s vanilla coconut milk and it was perfect. Love it!
You asked about my green juice, I make a variety of juices, depending on what I have on hand. The one I typically make is below. Let me know if you make it….I really like it.
Romaine lettuce
Kale or Spinach
1-2 Celery stalks
1/2 cucumber
a handful of grapes
1 green apple
1 pear
ginger
(I add the juice of 1/2 a lemon at the end)
Additionally, sometimes I’ll add the green juice to the blender with a banana for sort of a smoothie.
yum! i read that chia seeds are good for you, but i’ve never really searched for them. thanks for the heads up on trader joe’s! i have yet to visit that store, in this town :/
but when i do, i have the recipe bookmarked for a delicious breakfast or snack.
have a lovely hump day, karen! it has finally cooled down over here to double digits: 97-ish, with breeze. Bleh, allergies and heat. :/
This looks wonderful! I like how you are so creative with your recipes, Karen. I’m just a bit too lazy to try and invent. My husband will make something delicious and nutritious out of nothing, tho.
I love to use them to make “chia fresca” – basically water with chia seeds added and citrus juice of your choice. I also add a Splenda – but that’s just me. Once it sits for about 30 minutes, it gets a texture similar to bubble tea except the “bubbles” are small. I use about a tablespoon of seeds for 16 oz of liquid. Way more fun than drinking plain water!
Unfortunately, I find that chia can be a bit, ummm, constipating. So, I try to only eat them once or twice a week.
I’ve been eating Chia seeds for a couple months now! And I have to say I can only use them mixed with a glass of water and chugging it. I tried to put it in rice and chicken once and the mixture of soft and crunchy was like eating bugs. I was disgusted and have since just used them in water. But maybe I’ll get over my texture fear and try this recipe! Are the seeds still crunchy or are they soft from sitting for a couple hours?
That’s a great idea. I use chia seeds every day in my vitamix for a health shake, but have never tried to make a pudding. Does it come out very firm, or slightly liquify? I’m going to try this weekend. A beauty secret of a different kind. Thanks!

Hi Deseire,
Oh, I love banana pancakes. Are the pancakes crunchy when you add the seeds in?

Hi Reesa,
Yes, it’s very dessert-like! I usually eat half before my workout and then save the rest to eat after dinner as a treat.
If it’s not sweet enough, you could always add honey before mixing everything together.
What do you usually put in your green juices and smoothies?

Oh sure. I think they recently started carrying them! You can also find them at health stores and grocery stores like Whole Foods.
Funny that 97 is “cool.” You’re in Vegas, right? At least it’s a dry heat!

It definitely looks good! I wonder what chia seed tastes like, I really have no clue.
Karen says
They really don’t have a lot of flavor. They’re kinda like tapioca, I guess.
Kiss & Make-up says
Oh I see. Hmm. Okay. But full of goodnezz for the body right! 🙂

I love chia seeds. They have the same benefits as flax seeds, but chia seeds are ‘softer’. Ground flax can have sharp edges.
