Scrambled eggs, salsa and, um, a frozen waffle? Yep, it sounded weird to me at first, but then I tried it, and now I’m 100% on board.
The flavor’s a mix of savory and slightly sweet, like fried chicken and waffles or one of those McDonald’s McGriddles sandwiches.
I hope you give it a try. It’s really good!
I found the recipe on womenshealthmag.com and only changed it a little. It takes less than five minutes to make, and it’s pretty healthy, too.

Gotta love easy/healthy breakfast! I’ve been making a homemade mcmuffin everyday – whole grain English muffin, poached egg and a slice of cheddar. Yum!

Hmmm, salsa on eggs, I know people that love it, but it’s not for me. I might try it with chopped tomatoes on top instead and some cheese. 🙂
I always forget that I can do other things with waffles when I run out of maple syrup!

That looks awesome! I love putting unusual toppings on toaster waffles – I hadn’t considered this one, but I love the idea. One of my favorites is garlic butter with shallots and lemon on toaster waffles.

Looks delicious will have to try it! Every Sunday I toast Eggo waffles and put strawberries, blueberries and powdered sugar on top. Also fry up a few slices of turkey bacon on the side.Starts my week off right!!

Healthy and easy – perfect! I’m not a huge salsa person though so this sounds a little iffy to me. I’d probably like it better if it was just diced tomatoes on top instead of salsa.
