Oh, these vegan flourless thumbprint oatmeal cookies are so good!
So good that when I made them last weekend (for the third time in the past two weeks, mind you), it was the first time I was actually able to successfully exert enough self-restraint to take pics of them before gobbling them up. This batch has a raspberry jam center.
I think they’re good any time of day, but especially at breakfast with a big cup of coffee/tea.
I got the recipe from ohsheglows.com, a vegan recipe site, and it’s blissfully easy to follow.
Warning: you may not want to share these at all with anyone (they’re that good), not even your significant other.
That’s why I recommend making a double batch and hiding them. 🙂

I made them, and man are they delicious! I did half of them with apple butter and the other half with blackberry jam. I’ve only eaten one and trying to resist eating them all >__>

Haha, thanks but they’re definitely not as pretty as yours!
I put a couple tbsp of natural peanut butter in a plastic bag, cut the corner off to make a tiny pipette, and then warmed the peanut butter in my hands and over the cooling open oven to melt it. If I were to do it over though I would wait until the cookies were cool before pipetting the peanut butter, as it spread out and melted too much on the cookies while they were hot. I would probably also make my plastic bag hole even smaller, if I wanted to get super duper fancy. Hope that helps! 😀 Cookie lovers unite.

Awesome, thank you for the tips. I tried putting the peanut butter on with a spoon and it was a complete fail! It just clumped up in the middle and looked like a kindergartner did it. LOL. I’m going to make these again tonight (!) and will try that.
